Halloween Antipasto Eyeballs
These Halloween Antipasto Eyeballs are an easy no-cook appetizer made with salty jamón, creamy mozzarella, and black olives.
Each mozzarella ball becomes a spooky eyeball, while ribbons of jamón wrapped around the outside give them a suitably gruesome Halloween look.
Finished with a drizzle of balsamic glaze and fresh basil, they’re perfect for a Halloween cheese board or party platter.
Ingredients
- 12 mini mozzarella balls (bocconcini or ciliegine)
- 12 thin slices jamón or prosciutto
- 6 black olives
- 2 tablespoons balsamic glaze
- 1 tablespoon extra virgin olive oil
- Fresh basil leaves, for serving
- Freshly ground black pepper, optional
- Cherry tomatoes, optional for serving
Instructions
Prepare the Mozzarella
Drain the mozzarella balls thoroughly and pat them dry with paper towels. Removing excess moisture will make the eyeballs easier to assemble.
If the mozzarella balls are particularly small, you can use two together inside each piece of jamón to create a larger appetizer.
Prepare the Olive Pupils
Drain the black olives and slice them crosswise into thin rings.
Choose the neatest rings for the eyeballs. You’ll need one olive ring for each mozzarella ball.

Wrap with Jamón
Take a thin slice of jamón and loosely fold or roll it around a mozzarella ball.
Leave the top of the mozzarella exposed so that it resembles the white of an eye.
Continue wrapping and folding the jamón around the bottom and sides. An irregular appearance works particularly well here, as the folds of cured ham give the eyeballs a suitably creepy look.
Add the Pupils
Place one black olive ring onto the exposed mozzarella.
Press it down gently so that it stays in position. If necessary, use a tiny dab of balsamic glaze underneath the olive to help it stick.
Repeat with the remaining mozzarella, jamón, and olives.
Assemble the Platter
Arrange the antipasto eyeballs closely together on a large serving plate.
Scatter a few fresh basil leaves around the platter and drizzle lightly with olive oil and balsamic glaze.
Add freshly ground black pepper if desired.
Recipe Tips
- Use thinly sliced jamón: Very thin slices are easier to fold around the mozzarella and create the wrinkled appearance shown in the finished appetizer.
- Dry the mozzarella: This helps prevent excess liquid from collecting on the serving platter.
- Use black olives: Their dark color creates a strong contrast against the white mozzarella.
- Don’t wrap them perfectly: Loose, uneven folds of jamón make the eyeballs look more gruesome.
- Keep them bite-sized: Mini mozzarella balls make these easy to pick up and eat at a Halloween party.
- Serve chilled: Keep the assembled eyeballs refrigerated until shortly before serving.
Cheese Variations
Fresh mozzarella is ideal because its bright white color and round shape naturally resemble an eyeball. For a slightly richer version, you could use small balls of burrata or mozzarella pearls grouped together.
For extra flavor, look for mozzarella balls marinated with herbs and olive oil, but drain and dry them thoroughly before assembling.
Make Ahead
The Halloween Eyeballs can be assembled several hours before serving. Cover the platter and refrigerate until needed.
For the best presentation, add the balsamic glaze and fresh basil immediately before serving.
Serving Suggestions
Serve the eyeballs as part of a Halloween antipasto platter with cherry tomatoes, roasted peppers, marinated olives, crackers, breadsticks, and extra cheese.
They also pair especially well with focaccia or toasted crostini, making them an easy savory alternative to all the sweet treats on a Halloween party table.
